If you don’t have time to travel to Chicago for a delicious New Haven-style pizza from Piece Brewery and Pizzeria, make your own thin-crust pizza pie with ingredients found in your very own fridge.

This homemade pizza is a mozzarella, parmesan, goat cheese variety, topped with fresh basil, rosemary, and grated yellow squash. Although this combination may seem strange, the result is both light and tasty. It’s easy to make, especially if you buy fresh dough to save baking time. I prefer to use whole-wheat dough for a healthy option, and I let it sit on the counter for 20 minutes to make it easier to roll into thin-crust.

Ingredients: (makes one medium pizza)
1 package pizza dough (I prefer Trader Joe’s whole-wheat pizza dough)
½ cup shredded mozzarella cheese
½ cup crumbled goat cheese
2 tbs. Fresh grated Parmesan
1 small yellow squash
½ cup tomato sauce
1 tbs. chopped fresh rosemary
2 tbs. chopped fresh basil
salt and pepper to taste (use coarse salt if available)

Directions:
Preheat oven in accordance with pizza dough package
Roll room temperature dough on a floured surface, rotating constantly
Pull edges to stretch dough until it is about 1/8” thick
Top with sauce, mozzarella, and goat cheese
Grate squash with the coarse side of a box grater, and spread over pizza in a thin layer
Top with remaining ingredients, distributing evenly
Bake on an oiled baking sheet until bottom of crust is slightly browned
Sprinkle coarse sea salt right after you pull it out of oven for a great crunch and restaurant-worthy appeal
