Ingredients

  • Melting chocolate
  • Ginger snaps (gluten-free if necessary)
  • Pumpkin ice cream

Instructions

  1. Melt the chocolate over a double boiler or in the microwave. (If you choose to melt the chocolate in the microwave, melt in 30-second intervals, stirring in between each.)
  2. Dip ginger snaps in melted chocolate, covering half of the cookie. Place the ginger snaps on a cookie sheet covered with parchment paper. Place in the refrigerator so the chocolate hardens completely.
  3. Using a small spoon, sandwich a small scoop of pumpkin ice cream between two chocolate covered ginger snaps. Serve the sandwiches immediately or place in a covered container in the freezer.

I love how easy these ice cream sandwiches are to put together. If you want to get fancy, make homemade no churn pumpkin ice cream instead of using store bought. Wrap the sandwiches in strips of parchment and secure with baking twine for easy serving. I guarantee guests  of all ages will love these ice cream sandwiches!

Thanksgiving is all about family, friends and delicious food. Luckily, the food blogging community is all about these things as well. To celebrate the holiday, I’ve teamed up with Meghan from Cake ‘n Knife, Susannah from Feast + West and 60 other bloggers who are sharing recipes this week.

Blogsgiving DInner 2015 // Twin Stripe

Each blogger is bringing one or more dishes to our Thanksgiving dinner party, so be sure to stop by each one and get some ideas for your own holiday meal. We’ll be posting to social media with the hashtag #blogsgivingdinner, but you can see all the whole menu in Part 1 and Part 2 of the recipe round-up. You are sure to find the perfect recipe for your Thanksgiving feast!

I hope you all have a wonderful weekend! I’ll be putting the final touches on some decorations for the Bright Blog Bash and picking out the last few gifts for the holiday gift guide. Follow along on Instagram for a look behind the scenes!

  1. I can already tell these are going to be a hit anywhere that I bring them. I am always looking for an alternative for pumpkin flavors and this may just be it! I can almost taste the sweet, cinnamon-esque bite of the ice cream on my tongue. I have some leftover homemade pumpkin oatmeal cookies, I wonder if this would work??

    1. Hi Makenna! Sorry for my delayed response, but I think pumpkin oatmeal cookies would be delicious! Yum!

What do you think? Katie loves to hear from you!
