Can you believe Thanksgiving is less than two weeks away? If you are working on planning your menu and want to add something different to the mix, try these mini pumpkin pie ice cream sandwiches. The best part is, they can be made in advance and frozen until Thanksgiving.
- Melting chocolate
- Ginger snaps (gluten-free if necessary)
- Pumpkin ice cream
- Melt the chocolate over a double boiler or in the microwave. (If you choose to melt the chocolate in the microwave, melt in 30-second intervals, stirring in between each.)
- Dip ginger snaps in melted chocolate, covering half of the cookie. Place the ginger snaps on a cookie sheet covered with parchment paper. Place in the refrigerator so the chocolate hardens completely.
- Using a small spoon, sandwich a small scoop of pumpkin ice cream between two chocolate covered ginger snaps. Serve the sandwiches immediately or place in a covered container in the freezer.
I love how easy these ice cream sandwiches are to put together. If you want to get fancy, make homemade no churn pumpkin ice cream instead of using store bought. Wrap the sandwiches in strips of parchment and secure with baking twine for easy serving. I guarantee guests of all ages will love these ice cream sandwiches!
