Mother’s Day Week

We thought we’d switch things up a bit this week. Instead of a weekend review post, we’re dedicating today and the rest of this week’s posts to Mother’s Day. Needless to say, our moms are the best! Instead of a traditional brunch, we’ve got a recipe and some decorating ideas for a Mother’s Day pizza night.

As you might have noticed, we are pretty crazy about homemade pizza. This strawberry, basil and goat cheese pizza is perfect for the season and for moms. We arranged the strawberries in the shape of a heart and served our pizza with greens from the farmer’s market and some pink champagne. The color of the champagne complimented the blooms on the table.

Strawberry, Basil & Goat Cheese Pizza (adapted from Fit Sugar)

1/2 cup (about a handful) of basil, sliced or torn
3/4 cup strawberries, sliced
2 tablespoons olive oil
2 teaspoons balsamic vinegar
3 oz. goat cheese
1 package whole wheat pizza dough (we love Trader Joe’s)
Cracked black pepper

Preheat oven to 450. Roll the dough out to about 12 to 14 inches around. With a pastry brush, lightly brush the crust with olive oil and 1 teaspoon of balsamic vinegar. Spread goat cheese over crust. Bake in oven for about 5 minutes, then remove from oven and top with sliced strawberries and basil. We then brushed olive oil over the entire pizza. Bake for 5 more minutes until crust is nicely browned. Once out of the oven, drizzle with the remaining 1 teaspoon of balsamic vinegar and sprinkle with black pepper.

We finished the evening with chocolate mini ice cream cones from Trader Joe’s. They were the perfect sweet treat. What are you planning for your mom this Mother’s Day?
