It’s not Valentine’s Day without a delicious pink cocktail. Last weekend when in Chicago, I had a lovely sweet and tart cocktail that I couldn’t wait to replicate. I used grenadine and lemon juice to provide The Sparkling XOXO with the perfect combination of sweet and tart. Add some gin and your favorite sparkling wine and your cocktail is complete. I made grenadine ice cubes with OXO’s Xs and Os ice cube tray. I used a mixture of 1 part grenadine and 1 part water. I love how adorable they turned out. I’m also a huge fan of OXO’s steel cocktail shaker. It’s double-walled so your hands don’t get cold when mixing drinks. The shaker cap doubles as a jigger which is extremely handy.

The Sparkling XOXO: Valentine’s Day Cocktail for Two

Prep Time: 2 hours, 30 minutes

Serving Size: 2 cocktails

The Sparkling XOXO: Valentine’s Day Cocktail for Two

Ingredients

  • grenadine X and O ice cubes
  • 3 oz gin
  • 1 oz lemon juice
  • 1 oz grenadine
  • champagne

Instructions

  1. Combine gin, lemon juice and grenadine in a cocktail shaker filled with ice. Shake well and then pour into two coupe champagne glasses.
  2. Add grenadine X and O ice cubes to glasses and then top with champagne and a lemon twist.

This cocktail looks so lovely in coupe glass. The glass above are Kate Spade (similar). As the ice cubes begin to melt, the drink will become pinker and pinker. If you are wondering how to make a lemon twist, watch this this YouTube video for an easy solution.
