It’s almost Memorial Day weekend – the unofficial start of summer! That means it’s time to crank up the grill and treat yourself to a fresh watermelon mojito.
A cold, juicy slice of watermelon on a hot summer day is pretty amazing, but if you put that watermelon in a glass with fresh mint, lime, simple syrup and some rum, you have summer in a glass! In honor of the unofficial start of summer, I’ve created a delicious fresh watermelon mojito you can enjoy all summer long!
The watermelon and simple syrup give this drink the right amount of sweet and the lime gives it a hint of tart. This crowd-pleaser is an easy cocktail to make in large batches. Serve it in a pitcher all summer long.
- 5-6 1 in cubes of fresh watermelon
- 10 mint leaves
- 2 tbsp fresh lime juice
- 3 tbsp simple syrup
- 3 oz white rum
- Muddle watermelon, mint and lime juice in a cocktail shaker. When the pieces of watermelon have been crushed, add simple syrup and white rum.
- Shake all ingredients together and pour in two cocktail glasses filled with ice.
- Garnish the watermelon mojitos with lime and mint.
